Manual grape harvest. Pre-selection of the grapes in the field and in the winery. Cold Maceration. Fermentation in stainless steel tanks and at controlled temperature (between 25ºC – 28ºC).
Devatting off at 20 days.
Variety: 85% Garnacha + 40 Years
Barrel: French Oak, 4 months
Terroir: Slate and shard
Alcohol: 14%
Tasting Notes:
Visual phase: Red-violaceous cherry colour of high layer. Sparkly.
Olfactory phase: Intense. Ripe fruit, cocoas. Balsamic, candied strawberry and dried plum. Full-bodied and Mineral.
Gustatory phase: Full-bodied, very tasty and somewhat doomed. Liquorice and cloves. Balance and long. Pleasant with good retronasal memory.
Pairing: Suitable for a wide range of culinary possibilities, will accompany cured, stews, game and meats in general.
