Selection of 20 225L barrels (6,000 numbered Bordeaux bottles).
Harvest: Manual, with selection of bunches.
Variety: 100% Country Ink.
Barrel aging: 12 months (Spanish oak barrels).
Grade: 14.5% Vol.
Harvest and Elaboration
The harvest is done manually, selecting the best bunches at the optimum time of polyphenolic ripening, point in
which the grape has the highest concentration of colour and tannins. The grapes come from rain-fed vineyards over 30 years old, with glass formation, so the grapes mature slowly, concentrating sweet tannins, aromas and colour, due to their low production.
Once the grapes were harvested, the wines macerated for 40 days, in order to extract with intensity, the whole concentration of the grapes, and to round and refine the tannin.
Once the fermentation and maceration were finished, the wines were moved to new barrels of Spanish oak, from the Navarre Pyrenees forests. This wine has remained 12 months in barrels, all of them of light toasting, in order to preserve the characteristics of the grape. During aging, the barrels were filled frequently, and they were decanted in spring and autumn.
Finally, it was clarified and bottled.
Tasting notes:
Visual phase: cherry red very covered, clean, bright and glyceryl.
Olfactory phase: Aroma of high intensity, raspberry, ripe fruit in compote, cinnamon, cocoa, freshly roasted coffee. With the passage of time you can appreciate floral aroma, of violets.
Gustatory phase: Powerful, fleshy, sweet tannin, glyceryl, friendly.
Recommendations for consumption It is recommended to open in advance to your tasting, and let it rest in the glass to get the wine to open and acquire all its potential and complexity.
Drink at about 18ºC.
