Harvest and Elaboration
This wine is made exclusively in the most selected vintages, 2004 and 2005 of the past decade. The harvest is done manually, selecting the best bunches at the optimum time of polyphenolic maturity, at which point the grape has the highest concentration of colour and tannins. The grapes come from rain-fed vineyards over 50 years old, with glass formation, so the grapes mature slowly, concentrating sweet tannins, aromas and colour, due to their low production.
Once the grapes were harvested, the wines macerated for 40 days, in order to extract with intensity, the whole concentration of the grapes, and to round and refine the tannin.
Once the fermentation and maceration were finished, the wine was transferred to new French oak barrels of high level. This wine has remained 24 months in barrels, all of them with light toasting, in order to preserve the characteristics of the grape. During aging, the barrels were filled frequently, and they were decanted in spring and autumn.
Finally, it was clarified and bottled.
Tasting notes:
Visual phase: Cherry red very covered, with garnet tones in a thin layer, clean, bright and glyceryl.
Olfactory phase: complex aroma of high intensity, ripe fruit in compote, cinnamon, cocoa, freshly roasted coffee and roasted. With the passage of time you can appreciate floral aroma, of violets.
Gustatory phase: Powerful, fleshy, broad, sweet tannin, glyceryl, friendly.
Consumption recommendations
It is recommended to open in advance to your tasting, and let it rest in the glass to get the wine to open and acquire all its potential and complexity.
Drink at about 18ºC.
