Harvest and Elaboration
The harvest is carefully done manually, selecting the best plots according to parameters such as the type of soil, sun exposure, location of the plot, etc. Only the best bunches at their optimum moment of polyphenolic ripening will be used to make this wine of great personality within the cellar.
Once the grapes were harvested, the wines macerated for 35 days, in order to extract the full potential of the grapes, and obtain powerful and elegant wines, characteristics of PINNA FIDELIS.
The wine was placed in selected barrels of French and American oak from the best forests, without clarifying or filtering, remaining in them for 12 months.
During his stay in barrel his care was maximum, periodically performing the Battonage, filling the barrels and bringing it back in spring and autumn.
Finally, it was clarified with and bottled.
Tasting notes:
Visual phase: Cherry red very covered with violet tones in thin layer.
Olfactory phase: Red fruit: raspberry and currant, and black fruit: blueberry and blackberry, perfectly assembled with the spices: vanilla and clove, from the barrel, light tones of cedar.
Gustatory phase: Fleshy and unctuous, with perfectly integrated tannins, has a long and very pleasant aftertaste that invites you to continue tasting.
