Manual harvesting in small boxes of 18 kg, de-stemming and filling for cold maceration for 5/6 days, fermentation at a controlled temperature (max 21º) and two pumping per day, post-fermentation maceration for 2 weeks, aging on its lees during not less than one year before the barrel, wine not clarified or stabilized.

Tasting notes:

Visual phase: Intense cherry colour, high layer clean and bright.

Olfactory phase: On the nose a mixture of red and black fruit well-seasoned with spicy and balsamic notes, with aeration, lactic notes, violets and sweet spices, notes of leather and ink appear.

Gustatory phase: In the mouth, intense and dense sweet tannins, the notes of fruit and aging (spices and coffee) and minerals (ink) are well linked for a pleasant and long finish.

The storage temperature should not exceed 16ºC.

Pairing: Recommended for sausages, sausages, red meat, game and roasts.
