TYPE: “Pedro Ximenez” fortified wine.Very long aging
GRAPE VARIETY: 100% Pedro Ximénez.
ALCOHOL DEGREE: 15% VOL
AGING: Prolonged oxidative aging by the criaderas and soleras system for a period of over 25 years.
Tasting notes:
ASPECT: Bright. Very dense, unctuous with a marked and persistent trace of iodine in the glass. Impenetrable black colour. Iodized hues in the contours.
AROMA: Intense, deep and complex. Mixture very evolved by effect of the long aging of primary aromas characteristic of the raisins grapes, with others developed during the stay in the boot. There are perceptible shades of raisins fruits (grapes, figs and plums) as well as coffee, cocoa and exotic woods.
TASTE: Great structure in the mouth, dense, powerful, warm.
Very persistent Elegant memory of coffee and chocolate by retro nasal route.
SERVICE TEMPERATURE: Allows consumption at room temperature or very cold.
GASTRONOMY: Snacks or desserts accompanying sweets or ice cream. Also, with ice only or combined with seltz.
