Grapes: Macabeo(40%), Xarel·lo (40%) and Parellada (20%).Elaboration: 2nd fermentation in bottle at a constant temperature of 13ºC for 40 days and subsequent aging in rhyme in contact with the yeast for a minimum of 20 months.

– Reducing sugars: 2.80 gr / l.
– Sulfuric dioxide: 67 mg / l.
– Acidity: 3.90 gr / l.
– Service temperature: 4 – 6ºC.Tasting notes:
Visual phase: yellow with golden highlights. The bubble is fine and produces a remarkable and persistent rosary.
Olfactory phase: the fruity aromas (green apple and pear) stand out along with those derived from their aging (toasted almonds).
Gustatory phase: good palate, very dry but harmonious and balanced, fresh and elegant. The acidity does not present excessive edges, and the carbonic one appears well integrated in the wine. The bubble is fine, constant, with numerous bubble points and very persistent rosary.
Pairing: excellent as an appetizer, exquisite with fish, seafood, white meat and foie gras. -
